Pokémon FireRed and LeafGreen are remakes of Red and Blue. You might be asking "LeafGreen? But we don't have a Green!" Well, that's because in Japan, they had Red and Green instead, and Blue as a upper version like Crystal is a upper version to GS.
You go around the Kanto region as you did in the originals, but now you have the mechanics generation 2 and 3 introduced, with a very big post-game which you can read about here!
The basic objective of the games is to capture all 150 Pokémon and collect all
the eight gym badges while trying to fight off your rival who always appears when you don't want him to. Prof. Oak gives you either Squirtle, Charmander or Bulbasaur depending on your pick and your rival picks the one you are weak to.
Then it was all up to you. Also, depending on if you had FireRed or Leaf Green, Deoxys would be a different form, either a attacking or defensive one.
Also, Firered and LeafGreen are the first Pokémon games to have wireless connection!
